How to Create a Catering Production Sheet

A production sheet tells the kitchen what must be made, how much, by whom, with which equipment, and by what deadline. It connects the client’s order to the actual work required for the event.

Translate the order into batches

List each dish, required quantity, recipe yield, number of batches, pan size, and serving unit. Make adjustments visible instead of relying on someone to remember them.

Break dishes into tasks

Separate washing, cutting, marinating, mixing, cooking, cooling, reheating, garnishing, and packing. Assign start and completion times based on the event timeline.

Assign staff and equipment

Identify the person responsible for each task and the oven, burner, mixer, refrigerator, holding unit, or work area needed. This reveals conflicts before production begins.
